Chłodnik! You're right — favourite of mine. AFAIK a real Polish chłodnik isn’t made with beetroot though, but I'm damned if I remember what it *is* made with. Something white.
As I think I tweeted to you, the Polish word for pavement is chodnik, so at one dinner I inadvertently requested placement as my starter.
